Oh that apron is adorable! Here is my recipe - it's a zucchini quiche-type casserole
"Garden Zucchini Casserole"
4 c zucchini diced
1 med onion, diced
1 small tomato diced
1 green pepper diced (I always skip the pepper)
1 c biscuit/pancake mix
1 c grated cheddar
1 tsp salt
dash of pepper, oregano, basil
3 tbs chopped parsely
3 eggs
2/3 c cooking oil
Mix all ingredients except eggs and oil. Place in greased dish (pie plate works.) Beat eggs and oil together, then pour over top. Sprinkle with paprika if desired. Bake uncovered, at 350F for 45 min.
Just don't take any shortcuts and throw the zucchini in your food processor - it will be too soggy.

I made this last night before my son's baseball game. I forgot how easy and fast it was.

Boil 1 package of egg noodles until done and drain.
While boiling egg noodles add to another pot on medium heat:
1 can of cream of chicken
1 can of milk
2 cans of tuna (drained)
1/2 block of velvetta cheese cut into cubes
Salt & Pepper to taste
Once cheese melts add mixture to egg noodles in a casserole dish.
Crush Ritz crackers and add to the top of the casserole.
Bake in a 350 degree oven until casserole bubbles and crackers are a golden brown (about 15 min)

Serves 4
Hands-On Time: 20m
Total Time: 20m
Ingredients
12 ounces rigatoni (about 4 1/2 cups)
1 tablespoon olive oil
1 onion, sliced
6 ounces fully cooked chicken sausage links, sliced
1 small head broccoli, cut into florets and stems sliced
1/4 cup grated Parmesan (1 ounce)
Directions
Cook the pasta according to the package directions.
Meanwhile, heat the oil in a large skillet over medium-high heat. Cook the onion, stirring often, for 3 minutes. Add the sausage and cook, stirring, until browned, 2 to 3 minutes. Add the broccoli and 1¼ cups water and simmer, covered, until the broccoli is tender, 5 to 6 minutes.
Toss the pasta with the sausage mixture and any remaining liquid and the Parmesan.
My favorite quick recipe is chicken spaghetti!
ReplyDelete1 lb chicken cooked and diced
1 can diced tomatoes and green chilies
1 can cream of chicken soup
1 lb velveeta cheese, cubed
1 lb pasta, cooked.
I add chopped onions, bell peppers, and celery because I like them, but you don't have to.
Mix everything but the pasta over low heat until the cheese melts. Add in the pasta.
For my family this will feed us twice, so half immediately goes into the freezer for another day.

ReplyDelete1 box of spaghetti noodles
1 can of pasta sauce
mushrooms (optional)
pepperoni (optional)
olives (optional)
mozzerella cheese
1. Preheat oven to 350 degrees.
2. Cook spaghetti as directed.
3. Line 9X13 pan with pasta sauce on bottom
4. Layer in cooked spaghetti, and top with the remaining pasta sauce
5. Put pepperoni and mushrooms or olives on top.
6. Top with cheese
7. Bake for 30 minutes or until bubbling.

2 lbs boneless chicken breasts , cut into bite-size pieces
1-2 tablespoon olive oil
1 garlic clove , crushed
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/3 cup light brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 cup water
1/3 cup soy sauce
Directions
1. Heat oil in a large skillet.
2. Add chicken pieces and cook until lightly browned.
3. Remove chicken.
4. Add remaining ingredients, heating over medium Heat until well mixed and dissolved.
5. Add chicken and bring to a hard boil.
6. Reduce heat and simmer for 20 minutes.
7. Serve over hot rice and ENJOY

Crispy Almond Chicken-for 2 ( will feed 2 adults and 2 small kiddos)
Ingredients
1/2 c slice almonds
(butter)
3 boneless chicken breast, pound thinner
3/4 c whipping cream
1 T orange marmalade
1.2 T Dijon mustard, 1/4 red pepper, 1/2 c mayo
(white rice)
1 small bunch asparagus, trimmed
(butter,salt)
Dinner rolls
Instructions
Saute almonds in butter. Set aside. Saute chicken in butter on both sides for 1 min. until browned. Reduce heat to med. In a bowl, combine cream, mustard, marmalade, pepper and mayo. Add 1/2 of the almonds. Pour over chicken and cook for 10 min. until thick and sprinkle with rest of the almonds.
Serve chicken and cream over steamed rice.
Saute asparagus in butter. Salt. Serve w/ hot rolls/butter.

parmesan couscous with frozen peas added in at the end (just follow the directions on the box). Then some stove top cooked pork lions with some Mrs Dash seasoning blend on top.
Quick easy and you don't need a recipe!
Plus my 4 yr old LOVES it!
